RECIPE | Coconut Chia Pudding/ Parfait (Dairy Free, Gluten Free)


Chia pudding is one of the yummiest and easiest meals you could ever make! Using coconut milk rather than regular milk gives it a delicious creamy coconut flavour that you could happily eat for breakfast, lunch or dinner (or all 3!)

It's nice to have a breakfast that is easy, especially if you live in a crazy house like mine where mornings can be mayhem! Especially with a new little baby I find it hard to find time to eat, at least if there is something ready to go I am able to get to it quickly.

My chia pudding only uses 3 ingredients so it's super easy,  with the addition of toppings you wish to use. 

Sometimes I like to have mine layered with coconut or greek yoghurt and muesli, and sometimes I like it plain just with a little fruit added. 

Ingredients 
400ml can coconut milk or cream
3.5 tbs chia seeds
1/2 teaspoon vanilla bean paste

Directions
Stir all ingredients together in a bowl
Let sit for a few minutes then stir again
Refrigerate overnight 
Voila, in the morning you will have a delicious brekky ready to eat!

Chia pudding stores well for a few days in the fridge.
